Dr. Wei and colleagues from the School of Dental Medicine in Boston, Massachusetts, collected feces from 3 healthy subjects and then isolated the protein extract from them. The active strain of bacterial source of the enzyme was Pseudomonas aeruginosa.

Gliadin breakdown activity was seen. An enzyme called pseudolysin was isolated. This enzyme was active at both acidic and neutral environment.
Pseudomonas aeruginosa is an opportunistic bacteria present normally in gut but can wreck havoc in immune-suppressed patients.
Conclusions
The results indicate that such an enzyme product could be used as an oral agent with the goal of breaking down gluten in the stomach before it even gets to the small intestine and cause damage. However, since such enzymes can have Harmful effects as well, more studies are warranted.
